It looks like the very newest version is dated a month ago (august 30th.) Will you still be updating it with newer builds?

Probably.
The biggest problem will probably be drivers. ReactOS will need touch screen / writing pad (T think that's what the MIT laptop has) drivers. Then it will also need a driver to work with the flash memory controller.
